Beer Menu

 

Growler fills available for all beers unless served on hand pump or otherwise noted.

 

Mind King—6% IPA wheated in the mash and generously hopped with Citra and Polaris. Notes of soft citrus, bright oranges, and a field of allium.

Cocumscrance—5% Half oated house ale dry-hopped with Styrian General and Saphir. Naturally carbonated with our mixed culture. Notes of pineapple brettanomyces, lemon thyme, if pears were stone fruit, and good medicine.

Long Animal - 6.25% Puncheon fermented saison. Naturally carbonated. Blend of many barrel fermented ales. Lightly acidic, barnyard brettanomyces character, citrus, and dry oak leaves.

White Moon– 4.75% This table beer was brewed with a touch of wheat, hopped with “69” and Grungeist,  fermented with our house culture, and naturally carbonated. Notes of fresh culantro, the streets of Valencia, and blackberry brambles.

Tomorrow’s Friend—5.5% IPA brewed with wheat and oats, and hopped exclusively with Galaxy. Notes of crumbled vanilla graham crackers atop your grapefruit breakfast bowl in St. Pete while sipping that hippie lemonade.

Tiny Tim – 4.75% A bitter fit for autumn, hopped with Aurora and Hersbrucker. Notes of freshly salted soft pretzels, newly cobbled shoes, and Irish breakfast tea. Served on the hand pump.

Inspector Chin – 4% This dry stout was brewed with roasted and chocolate malts, and balanced with Saphir and Aurora hops. Notes of freshly ground espresso, Asian steamed buns,

and blueberry streusel pie.

Bottled Beer

Fuerald Tinferres – 6% A saison brewed with lots of fresh ginger stalks from our family farm in the late summer of 2016 and then aged in oak barrels. Available for take away and in-house consumption.

Lunaire – 6% An orange hued saison aged in wine barrels. Delightfully funky and tart, showcasing our microbial terroir. Available for take away and in-house consumption.

Solaire Reserve – 5% Bright and crisp saison. Fermented with this year’s foraged yeast culture.

From the Cellar

From the Cellar is our line of terroir-driven beers highlighting the unique micro-flora present in our barrel cellar. While our draft offerings are best served fresh at the source, these bottled beers will continue to evolve over time, aging gracefully over months or even years.
